Mellow, slightly sweet, and complex, this soy sauce is naturally brewed and made from brown Taiwanese tea beans ("tea beans") grown in Kaohsiung. Made using Taiwan's native citrus "citrus depressa" (also called "flat lemon"). Tea beans are brown in appearance and are smaller than traditional soybeans but are rich in flavour. The whole bean is fermented, they are not defatted soybeans, unleashing their unique flavour.

About the Citrus Depressa: Citrus Depressa, also known as the "flat lemon" is one of Taiwan's native citrus species. Citrus Depressa is grown in the summer in Hualien, Taitung, Kaosiung and Pingtung. Every part of the lemon, from peel to flesh is edible, offering a unique fragrance that is tangy yet not bitter.
